It's Not Winter Mango Chutney

I now am going to contradict myself. In my last recipe I praised the beauty of hot soup in the middle of a New England winter. And I still do believe in the incredible warmth and comfort that homemade soup can deliver.

However, sometimes it is nice to pretend that your yard isn't covered in snow and that the temperature isn't in the single digits. While I can't make the weather change, I can prepare food that at least can let your mind wander to warmer climates.

Which brings me to one of our dinners this week. Having made chicken stock using a whole roasting chicken, I had plenty of chicken meat left. Being incredibly tender from simmering in its own broth, it made the perfect filling for wraps. However, chicken on its own in a wrap is pretty boring.

So, what's a girl to do but add fun toppings to the chicken? There are simple things you can do, like buy interesting cheeses, such as goat cheese or blue cheese. You also can choose greens with flavor, like baby spinach or arugula. Another way to add flavor is to make chutney. Being a foodie, I like to make my chutneys. The benefit is I get to add the exact flavors that I want, not the flavors the food company wants to add.

For my chutney I wanted a balance between sweet and spicy, which brings me back to pretending it isn't winter. I used mango as the basis for this chutney. To me eating tropical fruit is a great way to feel like you're in a hot, exotic climate. Add some red pepper flakes and hot sauce for a little kick, and you have a good flavor combination.

Something to keep you warm? Yes.

Something to keep you looking hott? Must.

So this weekend, I'm heading up to Hunter & I'm in a mad dash for snow gear.

The look? Freezing-to-death meets cute-snow-bunny.

As it so happens, I was just watching a re-run of The Girls Next Door (Confession: I'm obsessed... I know, I know...) & one of the girls had mentioned Burton.

My thought?

Burton makes cute women's ski clothes!? (I thought they just did boards & guy gear...)
